INGREDIENTS

Rice, vegetables, fruit, fish, saké, tea. We use an abundant variety of
home-grown ingredients.
Tsutamuraya’s meals use our home-grown ingredients as much as possible.
Homemade doburoko saké and fresh “Shinshu salmon”, cultivated right here at our home, are offered throughout the year.
A few carefully chosen stocked ingredients are also used.
In the photo, for example, with the exception of the soba noodles, everything is produced here at Tsutamuraya.

Here at Tsutamuraya we take great care in cultivating our food. For example, for our rice we have adopted a farming method using ducks. The ducks eat both weeds and pests, while their excrement becomes a fertilizer. This farming method avoids the use of herbicides, pesticides and chemical fertilizers. Also, our vegetables are grown as much as possible without the use of pesticides, and we do all of the care of our large fields by hand. We always keep in mind that we want people to feel reassured of the quality of our meals, knowing that our time and efforts produce better ingredients.

Doburoku Saké(720ml)
¥ 2,000 (tax included.)
Tsutamuraya’s Doburoku Saké is made with local spring water and our homegrown koshihikari rice, cultivated using the Aigamo (duck-farming) method.
The varieties of saké are called ‘Medaki’ and ‘Odaki’ after local waterfalls. The Medaki is sweet and easy to drink, while the Odaki has a crisp taste. At the ‘National Doburoku Research Convention’ our Medaki received an award for its deep, mellow flavour, while our Odaki was chosen for a prize due to its refreshing, light and clean taste.

Honey
¥ 1,500 (300g tax included.) , ¥ 2,800 (600g tax included.)
This natural honey harvested from hives kept on Tsutamuraya’s farmland.
The source of the honey is the beautiful plants and flowers mother nature provides.
With no additives or colourings, you can savour the rich floral taste of the honey.

Koshihikari Rice
¥ 2,000 (5kg tax included.) , ¥ 4,000 (10kg tax included.)
This rice is grown using a duck farming method, where our ducks eat weeds and pests and their waste becomes fertilizer. As such, it is a method for growing rice without the use of herbicides, insecticides or chemical fertilizers. Please enjoy the safe and worry-free rice used in our dishes as well as in your own home.
